Apple and Almond Cake

Start the fall season with this cake.

Ingredients
170g Butter, softened
4 Apples
100g Sugar
3 Eggs
130g Plain Flour
1 t Baking Powder
100g Almonds, ground
1/4 t Salt
100g Oatmeal
1 t Cinnamon
3/4 t Ginger
1/4 t Nutmeg
*extra butter, flour and sugar for the crumble
Directions
Preheat oven to 350ºF (180ºC). Butter round cheesecake pan and set aside.
Start by cutting the apples. First in half then in quarters, core the middle. Then cut again, you should have 8 pieces.
In a sauce pan add 100g butter, the apple slices and the spices: cinnamon, ginger and nutmeg. (if not enough butter add a tablespoon or more to coat all apples.) Cook on medium low heat until softened. About 10 minutes covered. Once roasted leave on the side to cool.
In a large mixing bowl add the butter, sugar and eggs. Stir till the mixture. Then add the dry ingredients: flour, baking powder, ground almonds and salt. Mix till combined.
In your cheesecake pan add a thin layer of the cake batter. Spread to cover the bottom. Next, add a layer of apples. Keep some apples back to put on top of the cake.
Spread another layer of cake batter, then the apples again. Save the butter that you cooked the apples with. Set the cake aside.
In the cooled sauce pan with the extra butter add the oatmeal, a few Tablespoons of flour and sugar. Mix until it makes a crumble. I like mine a little bit like cookie dough. Sprinkle this on top of your cake.
Bake for 30 minutes. Turn the pan 180 degrees. Bake again for 25 minutes and check your cake to make sure it is done in the middle. ENJOY! We like our cake with a bit of yogurt on top.
