Blueberry Chia Jam

Ingredients

1/2 Cup Fresh Blueberries

1 T Honey, local if possible

1/2 t Cinnamon

1/2 lemon, zest & juiced

Pinch Salt

Splash Water

2 to 3 T Chia Seeds


Directions

  • In a heavy bottom pot add the blueberries, honey, lemon, cinnamon, salt and water. Stir until blueberries have burst and a bit cooked. About 5-7 minutes. Add more water if it looks too dry.

  • Take the pot off the heat. Stir in 2 T of chia seeds. Wait 5 minutes, if the jam is still watery add the last 1 T of chia seeds.

  • Transfer to a tight lid jar. Frig and Enjoy!
