Cheesy Chive Biscuits

Ingredients
2 1/2 Cup Flour
2T Baking Powder
1/2t Salt
1T Sugar
3/4 Cup Butter, softened
1 Cup Cheddar, Cubed
4T Chive, fresh & chopped
1/2 Cup Buttermilk
Butter, melted for brushing the top
Directions
Preheat oven to 350˚/180˚.
In a large bowl add the flour, baking powder, salt and sugar. Mix well.
Cut butter into chunks. Add the butter into flour bowl. With just your fingertips rub butter and flour until there are small pieces.
Then add the cheese and chives, mix well.
Pour the buttermilk into the mixture. With a fork fluff and fold until everything comes together, if dry add a Tablespoon of buttermilk at a time until a dough forms.
On a floured table dump the dough and flatten with your hands, about 1 inch thick. Take one side and fold the dough to the other side. Flatten again, turn the dough 180˚. Fold again. Repeat this process one more time, 3 folds total.
Flatten out to about 3/4" thick. with a round cookie cutter (or a mason jar ring, a cup, etc.) cut out biscuits. Brush tops with melted butter.
Place all the biscuits on a parchment lined baking sheet. Bake for about 15 minutes or until golden brown. Eat right away with butter!
NOTE: If I have room in my freezer, I like to make biscuits in large quantities and freeze them for different occasions. I cut out all the biscuits (uncooked biscuits), place them on a floured cookie sheet or plate and put in the freezer for 10 minutes. Then once they are frozen I place them in a baggie for later use.
