Orange Almond Shortbread


Ingredients

1/2 Cup Butter, softened, kerry gold

2 Cups Flour, spelt

3/4 Cup Almond Flour

1/2 t Salt, sea salt

1 Orange Zest

3 T Sugar, coconut

1 Egg




Directions

  • Preheat oven to 350˙(180˙).

  • In a medium bowl add flour, almond flour, salt, orange zest and sugar. Mix well.

  • Add in the butter. With your fingertips break up butter into the flour mixture. Just use fingertips, your palms should not touch the dough. Keep mixing till all butter in incorporated.

  • At this point if mixture is too dry, add more butter a Tablespoon at a time. If too wet add more flour and almond flour, Tablespoon at a time. It should feel and look like crumbly.

  • Add egg, mix in with your fingertips or fork. Once done it should feel like a cookie dough ball.

  • You can wrap and frig/freeze this for a later date.

  • OR roll out 1/4" thick. Cut into fun seasonal shapes.

  • Place cut outs on parchment lined baking sheets. Bake for about 10 minutes or until golden brown.

  • Enjoy with a cup of tea.
