Ceasar Duck Egg Dressing

Ingredients
1 Duck Egg
1 T Lemon Juice
2 t Mustard
1 clove Garlic
1/2-1 C Olive Oil
Salt & Pepper
Directions
In a blender add egg, lemon juice, mustard, garlic, 1/2 t salt, 1/2 t pepper.
Blend just to break up the egg and chop the garlic, about 10 seconds.
Next, turn on blender, low speed. With the blenders lid on and through the hole on top pour the olive oil slowly, a thin ribbon of oil into the egg mixture.
Pour just enough oil till you have a nice emulsified dressing. It should not be too thick, like mayo.
Check the flavor-add more salt, mustard or lemon juice if needed.
Transfer to a jar and fridge. Use within a few weeks.
