Ceasar Duck Egg Dressing




Ingredients


1 Duck Egg

1 T Lemon Juice

2 t Mustard

1 clove Garlic

1/2-1 C Olive Oil

Salt & Pepper


Directions


  • In a blender add egg, lemon juice, mustard, garlic, 1/2 t salt, 1/2 t pepper.

  • Blend just to break up the egg and chop the garlic, about 10 seconds.

  • Next, turn on blender, low speed. With the blenders lid on and through the hole on top pour the olive oil slowly, a thin ribbon of oil into the egg mixture.

  • Pour just enough oil till you have a nice emulsified dressing. It should not be too thick, like mayo.

  • Check the flavor-add more salt, mustard or lemon juice if needed.

  • Transfer to a jar and fridge. Use within a few weeks.

  • Enjoy!
