Lumpia in a Bowl


Ingredients


1 Pound Ground Beef

1 Onion, quartered

4 Garlic Cloves, sliced

1 t Salt

2 Large Carrots, sliced on diagonal

1 Celery Stalk, sliced on

diagonal

4 Mushrooms, quartered

1 Small Red Bell Pepper, sliced

1 Small Yellow Bell Pepper, sliced

1 Small Orange Bell Pepper, sliced

1 Cup Broccolini, chopped

1/2 Medium Cabbage Head, shredded

1/2 Cup Cilantro, chopped

3 T Ginger, grated

4 T Toasted Sesame Seeds

6 T Lard

1/2 Cup Broth

1/4 Cup Soy Sauce


Directions

  • In a large skillet use 3T of the lard and add the ground beef, cook over medium/high heat, stirring constantly. While cooking the meat add to the same skillet onions, garlic, carrots, celery and salt. Cook until beef is brown and onion is soft about 10 minutes. Pour into a bowl and set aside.

  • In the same skillet add the rest of the lard. Put in the mushrooms and Broccolini, cook for about 5-7 minutes until Broccolini is tender. Throw in all the peppers, ginger and cabbage. Cook and stir till cabbage is soft. Add the broth if the pan is too dry. This helps steam the veggies and adds nutrientional value.

  • Keep the veggies in the skillet, add the bowl of ground beef. Stir everything together with soy sauce and sesame seed oil. At this point you can transfer to a serving bowl or leave in the skillet. Sprinkle the cilantro and sesame seeds on top.
