Nutrient Dense Spaghetti
Feeds 3 people
Ingredients
6oz Lardo, or Bacon
4 Garlic Cloves, chopped
6 Fresh Tomatoes, medium size, cut into
quarters
4 to 6 Fresh Basil Leaves, julienne
1quart Broth, homemade or bought
8oz Linguini Pasta, or Spaghetti
Salt and Pepper
Parmesan Cheese to sprinkle on top
Olive Oil
Directions
In a heavy sauté pan brown your lardo or bacon on medium heat. Once the lardo (bacon) is down, throw in your garlic for a few seconds only-garlic burns fast!
Next cook the tomatoes until slightly soft, about 3-5 minutes. Top with basil. Season slightly with salt and pepper.
Spread the pasta on top of the pan, I had to break my pasta in half to make it fit.
Slowly pour in your broth, stir. Bring to a boil, if broth is splattering, turn down the heat just a bit.
Keep uncovered and stir occasionally so the pasta does not stick to the bottom.
Here is the trick-the broth will thicken to make a nice sauce. Test your pasta, IF your pasta is still not cooked top with a little bit of water or more broth, about 1/3 of a cup. Cook until pasta is al dente.
Serve with a sprinkling of parmesan and a drizzle of olive oil.
