Ingredients
NOTE: Quantities depend on how many you are feeding.
Salmon Filets, skin on
Green Beans, stems removed
Green Onions, leave whole
Peppers, green or spicy, sliced down the middle
Garlic, skins off and crushed
Butter
Salt/Pepper
Rice
Water
Yogurt
Olive Oil
Capers
Mustard
Mayo
Salt/Pepper
Cilantro, chopped
Directions
Baked Salmon and Veggies: In baking dish add salmon in the middle of pan, skin side down, surround fish with all the veggies.
Top with crushed garlic, butter, salt and pepper.
Bake at 350 degrees or UK mark 180 fan. Turn veggies 10 minutes into cooking. Check the fish 30 minutes into cooking. I don't mind if it's a bit under cook in the middle of the salmon. Take out and let rest for 5 minutes.
Steamed Rice: Cook rice in rice cooker or however you like your rice to be done. Here is a great tutorial (cursing involved)
Creamy Sauce: Use the Yogurt as your base, add a few tablespoons of yogurt in a bowl. Then add a few teaspoons of capers, mustard, mayo and olive oil. Add a pinch of salt and pepper. Stir until combined. Taste to make sure the combo is right. Top with Cilantro.
