Quick Meals 03

PUMPKIN PANCAKES (gf, keto, v)

Makes 6 pancakes


Ingredients

1 Banana, ripe, frozen or fresh

1/3c Nut Butter

1/4c Pumpkin, fresh or can

1 Egg

Dash Cinnamon


Directions

  • Add everything to a bowl.

  • Mix until batter consistence. If too thin, add more nut butter; too thick add more pumpkin.

  • In a hot skillet add a nob of butter, stove should be medium heat.

  • Pour a little less of 1/4 cup of batter onto hot butter.

  • Cook on each side about 3 minutes. Make sure middle is cooked all the way through.

  • TIP: to keep all the pancakes hot, turn on oven to 200 degrees when you first start. Add a heat proof plate in the oven. When each pancake is done, put your pancakes on the plate. This helps to keep your pancakes hot but also helps cook the middle of the pancake!
