Streusel Fruit Compote Muffins

Ingredients

Fruit Compote

2 Cups Mixed Berries (such as blackberries, raspberries, gooseberries, etc.)

Raw Honey to Taste


Muffins

1/2 Cup Butter, room temperature

1/2 Cup Cane Sugar, (or Coconut Sugar)

2 Eggs

1 1/2 Cup Flour, All Purpose or Spelt

1/2 Cup Oatmeal, old fashion

1 t Baking Powder

1/2 t Baking Soda

1/4 t Salt

1/2 Cup Yogurt

2 T Buttermilk

Fresh Thyme for decoration


Streusel

1/4 Cup Butter, room temperature

1/2 Cup Flour

1/2 Cup Oatmeal, old fashion

3 T Cane Sugar

Pinch Salt


Directions

Fruit Compote

  • In a heavy bottom pan add the fruit. (I used summer fruit from the freezer.) On medium heat cook fruit till liquid comes out and fruit is soft, about 10 minutes. Stirring now and then. Once cooked turn off stove and add 1 T at a time of honey. Honey is to taste. (I used about 2T)

  • Set aside to cool while making the muffins.

Muffins

  • Preheat oven to 200 (400º) and line a muffin tin with liners.

  • In a small bowl add the flour, oatmeal, baking powder, baking soda and salt, stir to combine.

  • In a liquid measuring jug add the yogurt and buttermilk, mix.

  • Now in a medium size bowl with a wooden spoon mix together the butter and sugar until creamy.

  • Add both eggs, stir in eggs till combined.

  • First, add 1/3 of the flour mixture, stir in. Next, 1/2 of the yogurt mixture, stir in. Do this until everything is in.

  • With a Tablespoon add 2T of batter in each muffin well, 12 muffins. Save the rest of the batter to top off muffins.

  • Next, add 1T of fruit compote to each muffin well. Then, top each muffin with 2T batter again. There should be a layer of batter, then compote, then batter.

  • Once this is done, set aside and make the streusel.

Streusel

  • In a bowl add the streusel ingredients. With your fingertips mix the butter into the dry ingredients. Make sure it feels like a crumble, but when you press together in your hand it comes together. If too dry, add 1t butter. If too wet add 1t flour.

  • Crumble the streusel on top of the muffins. Spread the streusel evenly amongst the muffins.

  • Top each muffin with a spring of Thyme.

  • I like to press the thyme and streusel lightly into the batter.

  • Pop in the oven at 200º(400) for 5 minutes. This helps the muffins rise at first. Turn down the oven to 180 (350º), this temp. bakes the muffins for about 15 minutes. Check with a toothpick.

  • Take out and cool on a rack.
